Kabooki Sushi Sand Lake: Where Omakase Gets Serious in Orlando

Chef Henry Moso's kaiseki-style counter on Turkey Lake Road is the place Yomari and I go when we want a meal that actually earns the night out. Here's why it belongs on your list.

Kabooki Sushi Sand Lake: Where Omakase Gets Serious in Orlando

Yomari and I don't go out for sushi often. We go out for the right sushi. When we want a meal that slows us down, that makes us put the phones away and just pay attention to what's in front of us, Kabooki Sushi on Turkey Lake Road is the answer. It's not a casual Tuesday spot. It's where you go when the evening deserves it.

Chef Henry Moso runs a kaiseki-style omakase operation here, and the word "operation" is intentional. Every plate that comes to the counter has been thought through. The fish is seasonal, the nigiri arrives one or two pieces at a time, and the pacing asks you to be present. That kind of discipline is rare anywhere, and it's genuinely remarkable for Orlando.

What Makes Kabooki Different

Most sushi restaurants in a metro market give you a long menu and let you build your own meal. Chef Moso does the opposite. The chef's omakase puts the night entirely in his hands, course by course, with seasonal nigiri and multi-course selections built around what's best right now. That's a commitment from the kitchen, and it asks a matching commitment from you as the guest. Yomari and I have never left feeling like we got less than we came for.

The Dishes We Order Every Time

Chef's Omakase. This is the full experience, chef-directed, multi-course, seasonal nigiri moving through textures and temperatures one or two pieces at a time. It is the reason you book this table. Clear your evening and trust the kitchen.

Wagyu A5 Hot Rock. They bring it out on a searingly hot stone and you watch that marble ribbon of fat start to glisten and pull back at the edges. Melt-in-your-mouth goodness is not a phrase I use lightly. Here it's just accurate.

Hamachi Carpaccio. Best in town. I'll stand on that. The fish is clean and bright, the plating in that ridged blue stoneware is beautiful, and every bite reminds you why freshness is the whole game with hamachi.

Nabe Rice and Ribs. Ufff. That's really all that needs to be said. It's rich, it's warming, and it's the kind of dish Yomari and I are still talking about on the drive home.

Smoked Kabooki Old Fashioned. Order one at the bar before you sit, and order another when the omakase hits its stride. The smoke is real and the balance is right. It pairs with this menu better than anything else on the list.

Ambience and the Bar

The room at 7705 Turkey Lake Road earns its price point. The bar is long, marble-topped, and backlit with warm amber light bouncing off shelves stacked with a serious spirits selection. Hexagonal tile behind the bar, dark wood throughout, cocktails available alongside the meal. It's a full bar program, not an afterthought. The counter seating puts you close to the kitchen, and there's also a chef's table and outdoor patio for those who want a different angle on the evening.

A Team That Makes You Feel at Home

Great food gets you in the door. People are what bring you back. The staff at Kabooki is welcoming every time. Edgar runs the room as manager, Jan takes care of you at the bar, and Jamie looks after the tables. They make you feel at home from the moment you walk in, and that consistency matters as much as anything coming out of the kitchen.

Why I'm Featuring Kabooki Sushi

As LIVIN.in's Market Governor for Florida, I'm always looking for the places that prove a market is growing up. Not just adding more restaurants, but raising the standard of what dining here can mean. Chef Henry Moso is doing that quietly on Turkey Lake Road. Kaiseki-style omakase at this level, executed with this consistency, is a statement about what Orlando deserves. That's worth putting on the map.
